BBQ Goat Cheese, Peppercine Pizza on BBQed Pizza Crust

What time are you coming over tonight?

We are having pizza. I have sauce, mozzarella cheese pepperoni and mushrooms.

See you this afternoon.

If anyone else received this text from their father they would probably assume they were being invited home to dinner, right?

Not in our household.

I was driving half an hour to visit my parents last week and I received that text a day before from my dad. There was not a mention in the text that my mom had been sick for eight days. Also from what I perceived from the text message I was assuming I was being invited for a family meal.

When I walked into the house, not only did my dad inform me that I would be making the pizza, oh also he expected me to make the pizza dough from scratch. That’s when I commented that the house smelled like burning and inquired what was on fire. My mom was hallucinating at this point and had no idea what was going on and my dad informed me that burning smell was perfectly normal.

Than I found a pan on the stove top that had the burner lit under it for the last hour.

This was about the time that I texted my little brother to tell him,

Mom has been sick for eight days. Dad has gone feral. I don’t know how he has survived this long.

And that’s how we ended up having pizza for dinner last week.

BBQ Goat Cheese and Peppercine Pizza on BBQed Pizza Crust

1/2 cup goat cheese
1/4 cup peppercines dried well
1/2 cup pizza sauce ( I use Trader Joe’s Tomato Basil Creamy Sauce)
1/2 cup mozzarella, shredded
4 basil leaves, chopped
1 whole wheat pizza dough
1/4 cup coconut oil, melted
1 tab garlic salt
1 tab corn meal

 

Let the pizza dough sit at room temperature thirty minutes. Stretch it out on a cookie sheet.
Light a gas grill and turn to high.
Rub garlic salt and cornmeal on the dough.
With a pastry brush, brush one side with oil. Turn the grill to low.
Put the oiled side of the dough down on the grill and close the lid.
Wait one minute, maybe two, just until the dough starts to brown.
Put oil on the other side of the dough and flip it over.
Shut the grill again, and cook two more minutes until just cooked on the other side.
Return the crust to the baking sheet.
Preheat oven to 375.
On the pizza crust, layer the sauce, mozzarella, goat cheese and peppers.
Bake for ten minutes, until the cheese is melted.
Sprinkle the basil on top.
