Gluten Free Turkey Burger Pizzas

image I was down at the beach a few weeks ago and I was freezing. It was getting into the evening hours and Nordstrom was having their phenomenal anniversary sale and fall was slowly approaching any ways, so I thought maybe I will buy a sweater.
Before I continue this story you should probably know that I know nothing about fashion.
I will wear leggings and boots and yoga pants and short shorts and running shoes until I’m eighty.
If I’m feeling fancy maybe I will top off this look with a leather jacket, a Patagonia sweater or a cowboy hat.
As I searched the hangers of Nordstrom I came across this.
Yes, that girl is wearing a blanket.
It would appear that blankets are the new fashion trend.
It blows me away.

I did not buy a fashion blanket.
I did however laugh my ass off to warm myself up.

These gluten free low carb turkey burgers are just amazing. They are also one of my favorite go to dinners. Add any other pizza toppings you prefer, but this is my favorite version.

Gluten Free Turkey Burger Pizzas

1 pound ground turkey

6 cloves roasted garlic

3 sprigs fresh oregano

3 tablespoons Pecorino Romano cheese

1/2 cup mozzarella

1/4 cup feta cheese, crumbled

1/2 cup pesto sauce

1/4 cup roasted pine nuts

2 marinated red bell peppers, drained and chopped

1/2 cup cooked spinach, drained
Chip up the oregano and the roasted garlic. Mix this and the Pecorino Romano cheese with the ground turkey. Form into large, thick patties.

You can either grill the patties on the BBQ or bake in the oven at 400 for fifteen minutes.

Remove the parties from the heat and top with the pesto, the spinach, feta and mozzarella cheese, and peppers and pine nuts.

Return to the BBQ or oven for an adoption so 5-10 minutes until the cheese is melted.
