Gluten Free French Toasted Cococut Blueberry Waffles

    Most days I wake up at dawn to go running.
    Waking up at dawn has its advantages once I mange to pull myself out of bed.
    The sunrises are completely awesome here in my mountain home town, deep in the forest.
    And who needs sleep anyways, right?
    Before I run I usually throw together a pre run First Breakfast Smoothie

     1 banana
     3 creatin pills
     1/2 cup almond milk
     1 tsp cinnamon
     
    All of this in the blender. Maybe I add some cashew butter and protein powder if I plan a longer run; four miles or more. I can’t swallow pills so I open the creatin pills and dump the powder in my smoothies.
    The best thing about first breakfast than getting my run accomplished by ten a.m. most days, is I can come home after that and have Second Breakfast; like these Gluten Free French Toasted Coconut Blueberry Waffles.
    
Gluten Free French Toasted Coconut Blueberry Waffles

1 1/2 cups gluten free baking mix
1/2 cup Greek yogurt
2 eggs
1/2 cup almond milk
1 tsp vanilla
1/2 cup organic blueberries

2 eggs
1/2 cup Greek yogurt
1/4 cup coconut oil

agave maple syrup

Mix the eggs and Greek yogurt. Set aside.
Mix the baking mix, Greek Yogurt, eggs, almond milk and vanilla.
Add the blueberries last.
Cook this mix in a oiled waffle maker.
When waffles are cooked, dredge in the egg bath and fry in coconut oil.
Serve with agave maple syrup.
