Crunchy Hummus Slaw Salad with Golden Raisins and Sunflower Seeds

You really never notice how blue the sky is until you are at 13,000 feet. It’s such an amazing dark blue against the white of Mt Whitneys switchbacks. It’s such a phenomenal sight as I rested my back against a boulder, my heart feeling like it would explode in my chest. This hike, is beyond hard but one hundred percent worth it for the views and the bragging rights. How many people say they have summited Mt Whitney, and how many people have done this majestic and terribly hard trail multiple times?


The views are just unbelievable. Or maybe I’m just high off altitude sickness.

Six hours on the trail at altitudes of nine thousand to thirteen thousand feet can do that to a girl.

After a hike like this the only thing you want after is a really great, filling meal. This salad is phenomenal lunch after recovering from a long hike!

Crunchy Hummus Slaw Salad with Golden Raisins and Sunflower Seeds

1 bunch of red leaf lettuce
1 cup of shredded green cabbage
1 cup of shredded red cabbage
4 radishes, sliced
4 sprigs parsley, chopped
1/2 cup feta cheese
1/2 cup sun flowers seeds
1/2 cup golden raisins

1 bottle hummus salad dressing (Trader Joe’s makes a great one or just make your own)

Combine all to make a tasty hummus salad
