Cranberry Chocolate Chunk French Toast Stuffed with Stilton

    Yesterday I ran up a mountain five thousand feet.
     My feet, hips and back are aching today and I deserve some chocolate cheese stuffed French toast, damn it!
     The road to the top of San Gorgonio yesterday was paved with snow, ice and desire to make it to the top finally! ( this would be something like my fifth half ass attempt.) 
     I once again did not make it to the top  of San Gorgonio at over12,000 feet yesterday.
      I made it to 10,333 feet if the something like twenty mile round trip hike. I hiked on the way up and attempted to run on the way down bit by the time I reached eight thousand feet on my descent my feet were aching.
      It had been twenty three degrees when I reached the trail head yesterday morning so I wore my warmest outdoor clothes and my wool socks.
      My wool socks are not athletic socks.
      I walked all the way through my socks before I made it near the summit of Old Grey Back and had to turn around. That means the second half if the hike I pretty much did with no socks on.
      See why my feet were killing me?
      Besides my painful feet the South Fork Trail was a really awesome hike.

Cranberry Chocolate Chunk French Toast Stuffed with Stilton

6 Trader Joe’s cranberry chocolate chip rolls

White Stilton cheese with cranberries
Zest of 1/2 a orange
6 eggs
3 tab half and half
1 tsp vanilla
1 tsp nutmeg
Coconut oil

Maple syrup 
Powdered sugar


Cut each roll in half and stuff with the cranberry cheese.
Mix the eggs, half and half, orange zest, nutmeg and vanilla.
Dredge each roll in the egg wash and than fry each side in coconut oil.
Dress with maple syrup and powdered sugar.
