Coconut Shortbread Cookies with Chocolate Chunks

     A good friend offers to check your ass for leeches before you even ask.

     A better friend would probably warn her nature sensitive friends before they go crashing down the natural granite water slide into the chilly creek waters blow that yes there are leeches here and yes you may be picking them out if your crevices later.
     I however am not that friend.
     I mean they are little tiny leeches, it’s not like this is a scene from the 1986 movie Stand By Me!

     So after a day spent creek side going down natures waterslide in me inner tube I like to go home and relax and make these delicious and yes five ingredient cookies.
     I usually make a small batch (So I don’t pig out to much) but feel free to double the portions.
     The small batch however is the perfect size for a Nutri Bullet.

     I’ll admit it; I am obsessed with my Nutri Bullet.
     I use it to make everything from juice to cat food to cookies. ( I wash it out in between)
     Here is an amazing five ingredient recipe.


Coconut chocolate short bread cookies

1/2 cup Coconut oil, solid
1/2 cup Kerry Gold salted butter, cold
1 cup flour
1/2 Sugar
1/4 cup chocolate chips


Combine the butter, coconut oil, sugar and flour in a food processer or nutria bullet until well combine.
Add the chocolate chips and pulse one time, just to barely combine them.
Stir them a little bit just to combine with a spoon.
Heat the oven to 325.
Put the dough in a baking pan and use a spoon to flatten out the dough not leaving any loose pieces.
Bake for 12-16 minutes until just beginning to slightly brown.
