Coconut Breakfast Quinoa with Dried Apples and Spiced Nuts

      If there is one food I do not really enjoy it is those Quaker oatmeal packets that most people think us a great breakfast while camping.
       Sure they are easy.
       Yes they are light weight to throw in your Kielty pack when going on a week long back packing trip.
        But they taste like pre packaged fake cinnamon oatmeal and last time I checked Quaker brand is not gmo free.
        So how about a healthy substitute for camping or back packing blah breakfast oat meal.
        I give you Coconut Quinoa with Dried Apples and Spiced Nuts.
        If you are taking this back packing with you the directions differ just a bit.
        When most of the liquid has been cooked out if the quinoa let the quinoa cool and save it in a resealable plastic bag.
         Store the nuts and yogurt raisins separate and when it is breakfast time on camping morning just mix the pre cooked quinoa and nuts and fruit for a easy breakfast porridge. (You can even mix it in the same plastic bag that held the quinoa, yea no dishes in the morning!) 

Coconut Breakfast Quinoa with Dried Apples and Spiced Nuts

1 cup Quinoa

2 cups Almond milk
1 tab coconut oil
1/4 cup Dried apples pieces
2 tab Yogurt covered raisins
2 tab Pecans
2 tab Cinnamon almonds

     In a sauce pan boil the almond milk, coconut oil and quinoa for ten minutes or until the liquid is dissolved.
     Either set aside the cooked quinoa in plastic bags for back packing adventure morning breakfasts, or if you are serving this now, top with the apples, raisins and nuts and serve.
