Cinnamon, Brown Sugar and Chili Rubbed Carnival Squash

    Just ran three miles under a rising full moon on my favorite mountain trail. I’m ready for some roasted carnival squash dinner.

Cinnamon, Brown Sugar and Chili Rubbed Carnival Squash


1 Carnival Squash
1 tab chili powder
1 tab cinnamon
2 tab brown sugar
1 tab garlic salt
coconut oil



Microwave the squash for three minutes. This will soften it enough, it will be easier to slice. Slice the squash in half. Scoop the innards out of the squash. Mix the chili powder, cinnamon, brown sugar and garlic salt. With a pastry brush, brush the melted coconut oil all over the squash. Sprinkle with the seasoning and bake for 25 minutes at 350.
