Waking up at one in the morning with a screaming sore throat is never a fun time. Especially when your day off included plans to hike up a snowy mountain. I would so much rather be out in our snowy alpine forest with the mutt hiking under the trees right now. If I have to wake up with a cold though, candied ginger can help me feel better and back on the healthy track. Ginger, in general, is a great way to kick-start your metabolism back to healthy and less to coughing up neon colors. The anti-inflammatory gingerols and shaogals in the ginger root can help relieve that an awful sore throat and ginger is great at fighting off influenza to begin with. I try to sneak as much ginger into my daily diet as I can.Candied ginger

Last night as we were watching Fox News, we watched as the liberal left bashed Donald Trump for being a germ-a-phob. I see absolutely nothing wrong with being a germ-a-phob. Busy people just have no time for germs in their lives! I feel like people who spend their days on the couch smoking pot and playing video games all day just don’t understand us; Those other crazy active health conscientious people who get up at dawn to hike trails, get a great workout in and just be fit and alive and enjoy this lovely planet of ours. And P.S. we hate getting sick and having to be one of the immobile ones the couch, so keep your germs away from us!

This little bug that caught up with me today has me stressing out about all my plans for this super busy week and this germ-a-phob is kicking herself for not taking Zinc like she usually does every day. Yes, I’m that person who ignores sick people and douches my hands quite often in gallons of my favorite natural lavender hand sanitizer. Hello, my name is Amber, and yes I am a germ-a-phob and I’m okay with that because getting sick sucks and I would rather be ultra paranoid than have a headache and a sore throat all day.

The best cure for a case of the sniffles, in my opinion, is a Vitamin C filled Spinach Smoothie. When I get sick I may not feel good enough to make a smoothie or a Vitamin C filled spinach omelet for breakfast so instead, I try to get my Vitamin C in the form of blueberries; A high antioxidant food that I honestly don’t eat enough of. This warm superfood tastes amazing with Greek yogurt and my favorite homemade Candied Ginger Granola. I use frozen blueberries and when you defrost them in the microwave and then serve the blueberries with their juice warm over the yogurt it soothes even the most harse sore throat. If you are down with a nasty little cold then try this easy breakfast treat. And it’s even great before a hike if you are feeling healthy and ready to get out and hike some trails!

Candied Ginger GranolaClear Glass Hermetic Jar

2 cups gluten-free oats

1 cup buckwheat groats

2 teaspoons coconut oil

1 teaspoon cinnamon

1/2 teaspoon cardamon

1/2 cup slivered almonds

1/2 cup cashew pieces, lightly salted

2 teaspoons honey

2 teaspoons flax seeds

2 teaspoons chia seeds

1/4 cup candied ginger, chopped up

Mix all the ingredients but the candied ginger. Roast the granola in an oven at 325 for fifteen minutes, stirring every minute after the first five minutes. If the granola starts to burn, remove from the oven at once. Once the granola is cooled, add the candied ginger pieces.
