Brussels Sprouts with Cranberry Cashew Pesto

Today I sat in my small town library and tried to work on my blog in relative silence.

Libraries are supposed to be a quiet place to get work done and concentrate, right?
Some one needs to tell meth mouth sitting next to me this.
She has been talking to herself as she attempts to work the internet ( for the first time?) for the last twenty minutes and my concentration is well, I have none.
Instead I am inhaling her stench of eight a.m. Cigarette nastiness and some sort of Walmart perfume and wishing she would just have quiet time for five solid minutes.
She is trying to fill out a job application on line.
I know this, not because I am glancing at her computer screen or looking over her shoulder but because she is narrating the entire thing to me one mumble at a time.
      When did we become friends?
I did not sit down next to her, ask to bum a cancer stick and say, hey Bertha are you applying for that job at Mcdonalds today? That will buy loads of meth!
I do feel bad for this girl, that she has no job and is wearing pajamas in public and will never have a pretty smile, but she has asked me the zip code of the town we live in no less than seven times in fifteen minutes!
And every time I feel like I am getting high off her stinky tobacco breathe!
Oh god I need to make getting a new laptop a priority in my life.
So I can go home and make these delicious Brussels Sprouts with Cranberry Cashew Pesto and detox from my library experience.
Brussel Sprouts with Cranberry Cashew Pesto

1 cup Brussels sprouts, steamed

1/2 cup cranberries
1 tab coconut oil
1 tsp garlic, chopped
1/4 cup nutritional yeast
1 tsp garlic salt
1/4 cup crushed cashews

Cook the garlic in the coconut oil.
Cut each Brussels sprout in half and add to the garlic. Add the nuts, toast for one minute. Add the garlic salt.
Turn off the heat, add the nutritional yeast and cranberries.

Think of it this way: at least you weren’t sitting next to her on a transatlantic flight — in economy. Talk about TRAPPED. I have the cranberries. I just need the brussels. Hm. Why not?

Yikes! I would have thought the library would be a decent place to focus on a blog in silence. What about a coffee shop? Maybe bring headphones ;p

This recipe sounds delicious! I love the combination of brussels sprouts, cranberries & cashews. Thanks so much for sharing this at Healthy Vegan Fridays! I’m pinning this =)
