Broccoli Cheddar Chicken Quiche with a Croissant Crust

    Waking up on a stormy morning, thunder in the distance and fog so thick I can barely see past my porch I think do I really want to go running in that?
    My running shoes sit on the carpet, laces undone, glaring at me.
    I know I ate at least forty dolars worth of all you can eat sushi last night.

   “Carbo loading!” I greedily shouted, while shoveling jalapeno crusted dynamite and Popcorn Lobster Rolls into my mouth, well about as fast as I can.
    How do you know you have had enough all you can eat sushi?
    When your stomach decides for you and you almost shit yourself during dinner.
    If I can not stop myself than my body will stop me.
    I ate a lot of sushi last night; sashimi, baked green mussels, Alaska Rolls galore.
    I did bad things to myself and to pay the price I should go running.
   I should.
   Instead I made a fire, a latte and a quiche.
   I’ll run tomorrow?


Broccoli Cheddar Chicken Quiche with a Croissant Crust

1 package frozen croissant dough, defrosted for at least two hours
6 eggs
1 package Boursin cheese spread
1 cup poached chicken, cut into pieces
1 cup broccoli, cut into pieces
1 cup sharp white cheddar cheese


Spread the defrosted croissants in a greased baking dish. Bake this at 350 for 15 minutes.
In a bowl whip the eggs and the Boursin.
Remove the croissant crust from the oven, too with eggs, chicken, broccoli and the shredded cheese.
Bale at 350 for 15-20 minutes until the eggs are set.

    That sounds scrumptious! I’m your new “rowmie” on Yeah Write. I didn’t know the rows changed periodically, but this is great because I get to meet new Naplopomo friends!
