Chicken Sausage and Kale Biscuits and Gravy Casserole

This is a healthy recipe. Ha. Okay, really it’s slightly healthy. Do you love biscuits and gravy but also love your heart and don’t want diabetes and heart disease and also want to live to be a hundred, like I do? Relax bro, you can still enjoy a somewhat healthier biscuits and gravy breakfast! Hint; This tastes amazing after a twelve-mile early morning mountain bike ride on a sunny spring morning.

A healthy recipe for biscuits and gravy? Is that possible you may be asking? It just maybe if you use chicken sausage and add a little kale! Okay, maybe it’s healthier?

Once upon a time, I was challenged to make biscuits and gravy with chicken sausage. This being a challenge as chicken sausage is low in fat and you need the fat to make the gravy. I excepted this challenge and you know what? My healthier, kaler biscuits and gravy was phenomenal!

Chicken Sausage Biscuits and Gravy Casserole

2 sweet potatoes, roasted in the oven and sliced into pieces
1 package biscuits, cooked
8 eggs

Gravykale vegetables salad greens food healthy

1 package chicken breakfast sausage

1/2 a bunch dinosaur kale, chopped small
2 tab coconut oil
2 tab maple syrup
1 cup water
thyme
1 cup half and half
3 tab flour

Layer the cooked sweet potatoes in a baking dish. Crack the eggs on top. Cook at 375 about 15- 20 minutes depending on how well done you like your eggs.

Put the chicken sausage, cut into bite-size pieces in a pan with the coconut oil and the water. Roast at 375 twenty minutes or until brown. Mix in the kale.
Transfer the fats and maple syrup to a saucepan. Mix in flour, then the half and half until thick. Add the thyme.
Pour the gravy over the casserole and serve, biscuits on the side.
