BBQ Buffalo Burgers ( Oh Buffalo; You smell so bad yet Taste so Good!)

    The grasslands of North America used to be a place where the majestic yet smelly buffalo roamed free.

   That was before they were hunted to near extinction which is really to bad because buffalo is quite delicious and way lower in fat as compared to beef and yet higher in protein.
  According to Wikipedia there is a hybrid of cattle and bison called Beefalo which I guess is the new big thing in meat.
   It could be partially my fault the buffalo are growing nearer to extinction.
   There is a buffalo preserve in Utah near the Great Salt Lake called Antelope Island. 
   When I was about twenty two to twenty four we would make the long ten hour drive to Utah from Southern California to visit friends north of Salt Lake City in Layton, Utah.
   There was not a whole lot to do for ten friends visiting from So Cal who were not Mormon so we would drive out to Antelope Island and off road and chase the Buffalo with cars.

        So if the mighty yet so smelly buffalo is no more…. Well I guess we are to blame.

 

Buffalo Burgers

1 pound ground buffalo
1/2 cup BBQ sauce
3 slices bacon, cooked
1 tsp thyme
1 tsp garlic salt
4 slices sharp cheddar
1/4 cup thousand island dressing
4 pickle slices, dill
green leaf lettuce
4 potato buns

    Combine the meat, crumbled bacon, BBQ sauce garlic salt and thyme. Form patties with the Buffalo.
Grill the patties, topping with cheese.
Add thousand island dressing, pickles, lettuce and serve it all on a potato bun; so good!
